Sealed tanks used during the Charmat Method of fermentation, the adding of sugar and yeast to sparkling wine to create bubbles. The yeast and sugar are added to the sealed, pressurized tanks allowing a second fermentation to take place. To maintain the bubbles after fermentation, the wine is transferred to a bottle under counter pressure.
