A rich, buttery flavored dough that is baked into a tender but crumbly texture for cookies and dessert crusts. The dough, made with butter, flour and sugar, was traditionally pressed into decorative molds and baked until solid. It was then cut into small wedges and served as a biscuit type of cookie. Today shortbread foods are more commonly shaped into rounds or squares for both cookies and crusts.
