Lemon and Herb Potato Salad

Ingredients
- 2 1/2 pounds new red skinned potatoes, unpeeled
- 3/4 cup olive oil
- 1/4 cup fresh lemon juice
- 1 1/2 teaspoons grated lemon peel
- 1 medium sized green pepper, diced
- 1 cup red onion, diced
- 1/4 cup fresh chopped cilantro
- 1/4 cup fresh chopped basil
- Salt and pepper to taste

Directions
  • Cook potatoes in salted water until just tender. You don't want to over cook them. Drain

and allow to cool. Cut potatoes into cubes.
  • In a small bowl, whisk the oil, lemon juice,
    and lemon peel.

  • Add the green pepper, onion, cilantro, and basil. Whisk together and pour dressing over
    potatoes.

  • Add salt and pepper to taste.
  • Let stand in refrigerator for at least an hour to allow
    potatoes to absorb the flavors.
