 | | Directions | | Cook potatoes in salted water until just tender. You don't want to over cook them. Drain and allow to cool. Cut potatoes into cubes.
In a small bowl, whisk the oil, lemon juice, and lemon peel. Add to the oil, salt and pepper to taste, green pepper, onion, cilantro, and basil. Pour dressing over potatoes.
Let stand in refrigerator for at least an hour to allow potatoes to absorb the flavors. |
