A pasta salad that can be served at room temperature and is easy to pack. Goes well with grilled meats and makes a nice addition to a summer meal.

Rosamarina Pasta Salad Recipe
Directions
  • Combine the first 5 ingredients in a large bowl.
  • Whisk the remaining ingredients together in a small container and toss with the pasta mixture until well coated.
  • Cover the bowl and chill for a least 1 hour. Serve chilled or at room temperature.

-3 cups Rosamarina pasta (orzo) cooked (=1 cup uncooked)
-1 cup frozen green peas, thawed
-3/4 cup(3 ounces) feta cheese, crumbled
-1/4 cup parsley, chopped
-1/4 cup kalamata olives, chopped
-3 tablespoons olive oil (extra virgin)
-1 tablespoon balsamic vinegar
-1/2 teaspoon salt
-1/2 teaspoon black pepper
-1 clove fresh garlic, minced
