Rump Roast with Vegetables Recipe

Ingredients
  • 4 red skinned potatoes - cut into fourths
  • 4 large carrots - cut into thirds
  • 1 teaspoon seasoned salt
  • olive oil to coat
  • 2 tablespoons fresh rosemary - chopped
  • 1 cup beef stock or broth
  • 2 bay leaves
  • 1 onion - sliced into wedges
  • 3 1/2 pounds rump roast
Directions
  • Preheat oven to 450°.
  • Place cut potatoes and carrots on baking sheet that has been covered in foil, season with salt and sprinkle olive oil over all.
  • Mix to evenly coat.
  • Sprinkle on rosemary.
  • Place in the oven and roast for 20 minutes.
  • Meanwhile, place the rump roast in roasting pan.
  • Season with salt and pepper.
  • Sprinkle onions around roast.
  • After vegetables have roasted for 20 minutes, place around roast in roasting pan.
  • Add one cup of beef broth.
  • Roast at 450° for another 20 minutes then reduce heat to 300° and roast meat and vegetables until a meat thermomenter registers 130° for medium/rare meat and vegetables are golden. Do not cover while cooking.
  • Transfer meat and vegetables to a serving platter, cover loosely with foil to keep warm until serving.

Ingredients
  • dripping from the meat
  • 2 cups broth or stock, ( adjust amount according to need)
  • 1 teaspoon salt (to taste)
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder (to taste)
  • 1/2 teaspoon onion powder (to taste)
  • 1/4 cup cornstarch (for thicker gravy)
  • 1/2 cup cold water
Directions
  • After the meat has finished baking and been removed from the pan, reserve the drippings for the gravy.
  • Place pan on stove over medium high heat, and add stock/broth and water to the drippings, scraping the sides and bottom of the pan to loosen all the drippings. Bring to a low boil, stirring constantly, and cook until the liquid has slightly been reduced.
  • Add seasoning to taste, depending on the flavor already in the drippings. If you desire a thicker gravy, mix cornstarch in cold water, blend, and gradually add to the gravy, whisking all the time to prevent it from forming lumps. Serve warm

  • 8 ounces cream cheese , softened
  • 1/2 cup sugar
  • 8 ounces whipped topping
  • 1 can pineapple , 20 oz. crushed (well drained)
  • 2 cups crushed pretzels
  • 1/2 cup butter or margarine , melted
  • 1/2 cup sugar
Directions
  • Combine the cream cheese and sugar together in a mixing bowl and beat until the sugar is well mixed into the cream cheese.
  • Add the whipped topping and pineapple. Beat just until they are mixed in evenly. Store in the refrigerator.
  • Combine the crushed pretzels, melted butter, and sugar. Stir together until thoroughly mixed..
  • Spread the pretzel mixture out on a small cookie sheet that has sides. Place in an oven preheated to 425 degrees F. and bake for 5 minutes. Remove and allow pretzels to cool.
  • Add the crushed pretzel mixture to the cream cheese mixture just before serving. Note: Mix up only the amount that you feel will be eaten because the pretzels will become soggy after a few hours of being mixed in the cream cheese mixture.

    • 2 cups unbleached all-purpose flour (10 ounces)
    • 2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1 teaspoon sugar
    • 3/4 teaspoon table salt
    • 1 cup buttermilk (cold)
    • 8 tablespoons unsalted butter , melted and cooled slightly (5 minutes), plus 2 tablespoons melted butter for brushing biscuits
    Directions
    • Adjust oven rack to middle position and heat oven to 425 degrees. Grease the baking sheet.
    • Whisk flour, baking powder, baking soda, sugar, and salt in large bowl. Combine buttermilk and 8 tablespoons melted butter in medium bowl, stirring until butter forms small clumps.
    • Add buttermilk mixture to dry ingredients and stir with rubber spatula until just incorporated and batter pulls away from sides of bowl.
    • Using greased 1/4-cup dry measure, scoop level amount of batter and drop onto the greased baking sheet (biscuits should measure about 2 1/4 inches in diameter and 1 1/4 inches high). Repeat with remaining batter, spacing biscuits about 1 1/2 inches apart.
    • Bake until tops are golden brown and crisp, 14 to 16 minutes.
    • Brush biscuit tops with remaining 2 tablespoons melted butter. Transfer to wire rack and let cool 5 minutes before serving.

    • 1 box chocolate cake mix, prepared as directed
    • 3/4 cup low fat milk
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon almond extract
    • 1 box chocolate flavored instant pudding mix (3.9 ounce box)
    • 1 cup frozen nondairy whipped topping, thawed
    • 1/2 cup seedless raspberry preserves
    • 1 tablespoon confectioners sugar (optional)
    Directions
    • Prepare cake as directed and cook in two round cake pans. Invert on rack and let cool.
    • In medium bowl, combine milk and extracts. Beat in pudding mix on medium-low speed for 2 minutes. Fold in thawed whipped topping. Refrigerate 3-5 minutes.
    • Place one cake layer on platter. Spread with half the raspberry preserves. Spread 3/4 of the filling over top. Spread remaining preserves over second cake layer; invert over filling on first layer. Cover. Refrigerate until filling is firm, approximately 1 hour.
    • Before serving, sift confectioners' sugar over top. Garnish top with remaining filling, and raspberries, if desired.
    VARIATION: This cake can also be made using a 13x9 inch pan and using the mousse as the frosting.

    Cheesy Hamburger Noodle Hotdish Recipe

    • 2 pounds ground beef
    • 1 teaspoon onion salt
    • 1/2 teaspoon pepper
    • 8 ounces egg noodles or elbow macaroni
    • 1 can cream of mushroom soup
    • 1 can milk (use the soup can)
    • 1 tablespoon butter or margarine
    • 8 ounces Velveeta cheese
    • potato chips - crushed (optional)
    Directions
    • Brown the hamburger in a frying pan. Add the onion salt and pepper to the hamburger while it is frying. Drain off the grease after browning the hamburger.
    • While the hamburger is browning start cooking the noodles. Add about a tablespoon of salt to the cooking water before it begins boiling. Do not overcook the noodles.
    • When the noodles are done, drain the water and set them aside.
    • In the same saucepan that you boiled the noodles, add the soup, milk, butter, and Velveeta cheese. Heat over medium heat until the mixture is hot and all the cheese has melted.
    • Add the noodles and continue to cook until the noodles are hot. Turn down the heat a little so the mixture does not burn on the bottom while heating the noodles.
    • Once the noodles are hot, add the drained hamburger, stir until mixed evenly, and serve.
    Note: Instead of heating thoroughly in the saucepan, this hotdish can be put in a casserole dish, topped with crushed potato chips, and then baked at 350 degrees F. for 30 minutes if preferred.

    • 1 package Jell-O, favorite flavor - small pkg.
    • 2 bananas
    • Whipped topping - less than 8 oz. container
    Directions
    • Make Jell-O according to the package directions and pour into the serving bowl. Refrigerate until fairly firm.
    • Cut two bananas into approximately 1/8 inch thick slices. Layer the slices over the top of the Jell-O. You should have at least two layers of bananas.
    • Spread whipped topping over the layer of bananas. Make the whipped topping layer approximately 1 inch thick or maybe a little less. It should not take a full 8 oz. container of whipped topping.
    • Refrigerate until ready to serve.
    Note: We like to make this with cherry or strawberry Jell-O but you can use any flavor you would like.

    • 2 tablespoons butter
    • 1 tablespoon fresh parsley, chopped (optional)
    • 1 tablespoon fresh chives, minced
    • 1 1/2 pounds white fish fillets
    • 1/4 cup fresh lemon juice
    • salt & pepper, to taste
    • 1 lemon, cut into wedges
    Directions
    Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.

    In a bowl, cream together the butter, chopped parsley and chives.

    Arrange the fish in the prepared baking dish. Sprinkle with lemon juice, and season with salt and pepper. Dot the fish with about 2 tablespoons of the butter mixture. Bake 5 minutes in the preheated oven, until the butter is melted. Turn filets and brush with remaining butter mixture; continue baking 10 minutes, or until fish is easily flaked with a fork.

    Garnish with parsley sprigs and lemon wedges to serve.


    Instant Cheese Potatoes Recipe

    This recipe is a great way to add some extra flavor to instant potatoes. Your family won't settle for plain potatoes anymore.

    • 6 servings of prepared instant potatoes
    • 1 can French fried onions
    • 1 cup shredded cheddar cheese

    • Prepare the mashed potatoes. Add 1/2 can of French fried onions and 1/2 cup of cheddar cheese. Stir just until evenly distributed.
    • Scoop into a buttered baking dish, uncovered; place in an oven preheated to 350 degrees and bake for 25 minutes.
    • Remove from the oven and sprinkle with the remaining cheese. Top the cheese with the remaining French fried onions.
    • Place the potatoes back in the oven and bake for an additional 5 minutes.
    • Remove from the oven and serve while hot.

    Heat up the broiler. Use a broiling pan and cover with aluminum foil.

    Cut the broccoli into florets. Place broccoli on prepared pan. Pour the olive oil on the broccoli. Sprinkle with garlic salt, pepper and Parmesan cheese. Mix until everything is coated. Put in the oven in the top rack for 8-12 minutes.

    NOTE: The cheese has to melt and the broccoli gets a bright green color. If you like, keep it in the oven for few extra minutes until starts getting light brown and the broccoli will get crunchy.

    • Place a layer of ham on one slice of bread.
    • Add a layer of cheese and cover with another slice of bread.
    • Generously butter one side of the sandwich.
    • Place a skillet over medium-high heat and allow to heat up.
    • Add the sandwich to the skillet, buttered side down. While the sandwich is being browned on the first side, generously butter the unbuttered side while it is in the skillet.
    • When the first side is nicely browned flip the sandwich over and brown the other buttered side.
    • Once both sides are browned, remove from the skillet, cut in half and serve.
    • Continue to make as many sandwiches as needed to serve your family. You can cook more than one sandwich at a time if the skillet is large enough.

    • 1 onion, diced
    • 3 stalks celery, sliced
    • 1 1/2 cups carrots, sliced
    • 64 ounces chicken broth
    • 1 package frozen egg noodles
    • 1 teaspoon thyme
    • 2 teaspoons parsley
    • 1 bay leaf
    Directions
    Preheat oven to 375 degrees F. Line a baking sheet with parchment paper for easy clean-up.

    Place chicken on prepared baking sheet. Drizzle with olive oil and season with salt and pepper. Cook until no longer pink, 15-20 minutes; dice chicken up.

    In a stock pot, melt butter. Saute onion, celery and carrots until softened, approximately 5 minutes.

    Add broth, noodles, seasonings and diced chicken to mixture. Bring to a boil.

    Reduce heat to a simmer and cover. Simmer for 20-30 minutes until noodles are cooked.

    Remove bay leaf before serving.

    • 2 cups quick oats
    • 1 1/2 cups brown sugar
    • 1 teaspoon baking soda
    • 1 egg
    • 1 1/4 cups butter - cold
    • 1 1/2 cups apple - peeled, chopped
    • 3/4 cup caramel topping
    Directions
    • Preheat oven to 350° F.
    • Grease the baking pan with butter or non-stick cooking spray, set aside.
    • In large bowl, combine flour, quick oats, brown sugar, baking soda, and egg. Cut in the butter and mix well until ingredients are crumbly.
    • Remove 1 1/2 cups of the mixture and set aside. Press the crumb mixture into the baking pan, bake for 15 minutes in the oven.
    • While crust is baking, combine caramel topping and 1/4 cup flour in small bowl; mix well.
    • Sprinkle the apples over the baked crust. Drizzle the caramel mixture over the top of the apples. Sprinkle the remaining crumb mixture over the caramel.
    • Place back in the oven for another 20-25 minutes or until the top is golden brown.
    • Let cool completely before serving; approximately 2 hours.
    • Cut into 2" squares and serve.

    • 2 jalapeno peppers, seeded and minced

    • 7 ounces canned corn, drained

    • 1/4 teaspoon ground thyme
    • 3/4 teaspoon salt (adjust to taste)
    • 1/4 teaspoon coarse ground black pepper (adjust to taste)
    • 2 cups cooked rice
    • 19 ounces canned black beans, drained
    Directions
    • Prepare rice according to directions on box.
    • In a large skillet, cook sliced sausage* over high heat until browned, stirring several times to avoid burning.
    • Remove sausage from pan and add oil, onions, zucchini, peppers, garlic, corn, and dry seasonings. Cook for 5 to 7 minutes over medium heat, stirring frequently.
    • Add cooked rice and the beans, continuing to cook until all ingredients are hot.
    • Remove from heat and add sausage. Season to taste and serve.

    • 2 cups flour - self-rising

    • 4 tablespoons unsalted butter - cut up
    • 2 tablespoons sugar
    • 3 tablespoons milk - may need less
    Directions
    • Preheat oven to 425°F.
    • Make sure squash is drained well, let sit on paper towel to absorb any moisture.
    • Sift flour, baking powder, ginger, and cinnamon into a large bowl.
    • Add in butter and mix with fork or pastry blender.
    • Stir in sugar and squash.
    • Stir in milk, 1 tablespoon at a time until you have soft dough. Combine all ingredients gently.
    • Turn dough out onto floured surface. Press dough down until it's flattened out to about 1" thick, using hands.
    • Using a knife or 2" diameter glass, cut out scones in triangles or circles.
    • Place on parchment paper or silpat on baking sheet.
    • Bake for 10-15 minutes or until well risen and golden brown.
    • Serve warm.

    Spiced Cider Punch Recipe

    • tortilla chips
    • 1 pound ground beef
    • 1 package taco seasoning mix
    • 8 ounces sour cream
    • 2 cups shredded cheddar cheese
    Directions
    • Preheat oven to 350 degrees F. Spray a 9 x 13 pan with cooking spray.
    • Unroll crescent rolls on bottom of pan.
    • Crumble 2-3 handfuls of chips to cover.
    • Cook ground beef (can add chopped onions) and taco seasoning as usual. Turn off heat.
    • Mix in sour cream (this will look bad, but will taste yummy!). Pour mixture over chips.
    • Sprinkle with 1 cup of cheese.
    • Crumble 2-3 more handfuls of chips to cover and add remaining cheese to top.
    • Bake uncovered for 30-35 minutes.
    • Cut into squares for serving.
    • Can add picante sauce or taco sauce on top as well.

    Ingredients
    • 1/2 cup raw rice
    • 3 1/2 tablespoons butter, divided
    • 3 tablespoons onions
    • 2 tablespoons green pepper
    • 1/8 teaspoon sage
    • 1/4 teaspoon salt
    • 1 tablespoon flour
    • 1 1/2 cups tomatoes
    Directions
    Brown rice in 1 tablespoon butter.

    Add 1 1/2 cups hot water. Bring to a boil. Cover and steam slowly for 10 minutes.

    Put remaining butter, onions, pepper, sage and salt in another pan and brown lightly. Add flour and 1/2 cup tomatoes. Blend well, add remaining tomatoes and boil 5 minutes.

    Pour over rice, let steam until sauce has desired consistency.

    • 1 tablespoon ground cinnamon

    Directions
    • Preheat oven to 400° F. 
    • Cut all 8 tortillas into 4 sections each. Melt butter. In a small bowl, combine sugar and cinnamon.
    • Brush tortillas wedges with melted butter. Place on cookie sheets and sprinkle with sugar and cinnamon mixture. Place in heated oven and bake for approximately 6 minutes or until they are slightly brown.
    • Remove from oven and allow to cool.
    • Store in air tight container.
