Cut thick skinned winter squash by inserting a chef's knife and tapping with a kitchen mallet. Reposition knife as needed. The mallet will make this job much easier and safer.
For delicious grilled zucchini, cut at least 1/4 inch thick, coat both sides with oil to seal in juices and grill on medium for 3 to 5 minutes per side.
