If you want smooth applesauce without any chunks but you do not have a food mill or food processor, use a chinois or sieve to press the softened cooked apples through.

Add extra flavor to your applesauce by not peeling the apples, just core and slice. The peel contains a lot of flavor and will be removed as the apples are processed into sauce.
