Microwave winter squash before peeling to make it easier to remove the skin. Pierce the skin of the squash, microwave for 6 to 8 minutes; allow it to stand for 10 minutes, and peel.
When cooking summer squash, select cooking methods, such as baking and grilling, that will evaporate some of the moisture in the squash. This will produce a dryer squash when cooked.
To remove fibers from fibrous squash, whip cooked squash with an electric mixer. The fibers will be caught up in the mixer blades.
To remove moisture from squash, sprinkle flesh with salt, lay flesh side down on paper towels, and allow to stand for 20 to 30 minutes.
Cut thick skinned winter squash by inserting a chef's knife and tapping with a kitchen mallet. Reposition knife as needed. The mallet will make this job much easier and safer.
