Enjoy the blueberry season with these great recipes. The fresh blueberries in many of these recipes can be made with frozen blueberries if necessary. Blueberries are dark blue in color and have a smooth outer skin that has a very thin, silver waxy coating that is called bloom. They have a sweet taste and contain soft seeds that do not need to be removed before eating the berries.
When storing blueberries, do not wash the berries. This will extend their storage time. Check through the blueberries for bad or blemished berries and discard them before storing. Do not wash them until just before consuming or cooking.
Quick freeze blueberries by spreading in a single layer on a cookie sheet and place in the freezer for 1 to 2 hours; then place in a freezer bag and freeze up to two years.
When baking with frozen blueberries, do not allow them to thaw before adding to a recipe. The skins fall apart as they thaw and cause the berries to bleed into the batter.
When selecting blueberries, look for deep-purple blue colored berries with a silvery bloom coating. They should be plump and uniform in size, not shriveled. If the berries are reddish in color they are not ripe yet.
