Baking with Blueberries
When baking with frozen blueberries, do not allow them to thaw before adding to a recipe. The skins fall apart as they thaw and cause the berries to bleed into the batter.
Baking a Moist and Tender Ham
When baking a ham, remove it from the oven when it is 5 degrees below desired temperature. Allow the ham to set 15 minutes and its temperature will rise 5 degrees to desired temperature without overcooking and drying out the ham.
Don't Use Whipped Butter for Baking
When a recipe calls for butter or margarine, use it in stick form. Tablespoon for tablespoon, the whipped form is not an exact substitute because it weighs less.
