Swiss Steak 15 Recipe

  • 1 1/2 pounds round steak, cut into 4 pieces
  • 1/4 cup flour
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 onions, sliced thin
  • 2 tablespoons oil
  • 2 cups beef broth
  • 4 potatoes, cut inch 1/4 inch slices
Mix flour, salt & pepper. Dredge meat in flour mixture and brown SLOWLY in hot oil 20-30 min. Add broth. Cover and simmer, do not boil, for 30 min. Place potatoes and onions over meat. Season with salt and pepper to taste. Cover and cook 35 min. Serves 4
