If you like your chili with a little extra in it, this is the recipe for you. Extra onions and green peppers add extra flavor to this tasty chili.

Ingredients
  • 2 pounds ground beef
  • 1 cup chopped onions
  • 1 cup chopped green bell peppers
  • 1 can tomato juice - large can
  • 2 cans chili beans - medium (or hot if preferred)
  • 1 can Rotel tomatoes with green chilies
  • 2 tablespoons salsa
  • 3 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder

  • Brown ground beef in a large deep sided pot. Before it is completely browned, add the onions and green peppers and cook until the ground beef is completely done; drain grease.
  • Add all the rest of the ingredients and bring chili to a boil.
  • Turn the heat down so the chili is just simmering and let it simmer for at least 30 minutes. It can cook on a low simmer for longer if desired.
  • Serve with crackers or your favorite bread.

"I mostly made this for my husband because he likes chunks of tomatoes, onions and peppers in his chili but I don't. He loved the chunks of vegetables but said it could have been spicier. Next time I think I will add a few jalapeno peppers to it."
