Southwest Corn & Black Bean Salad Recipe

  • 1 can black beans, rinsed and drained (19 ounce can)
  • 1 cup corn kernels, fresh or thawed frozen
  • 8 green onions, sliced
  • 1/2 cup diced tomato
  • 2 teaspoons lime juice
  • 1 teaspoon ground cumin
  • chopped fresh cilantro to taste
Combine all ingredients in a large bowl. Cover and refrigerate until chilled, at least 2 hours. Serves 4.
