Swiss Steak 35 Recipe

  • 1/3 cup flour
  • 2 teaspoons salt
  • 1/8 teaspoon pepper
  • 2 pounds round steak, 1 inch thick, cut into desired pieces
  • 2 tablespoons cooking oil
  • 2 onions, chopped (medium)
  • 1/4 cup water
  • 1 can tomatoes (17 ounce can)
Mix flour, salt, and pepper. Dredge meat in mixture. Pound into both sides of meat with sharp-edged meat pounder. Heat oil in large heavy frypan. Brown meat slowly about 10 minutes on each side. Remove meat from pan. Cook onions in oil until golden. Stir in remaining flour from dredging meat. Add water and tomatoes and cook, stirring, until boiling. Return meat to pan. Reduce heat; cover and simmer 1 1/2 to 2 hours until very tender. Serve hot.
