BAKED SAUSAGE AND VEGETABLE CASSEROLE Recipe

Ingredients
  • 4 potatoes, with skin on (large)
  • 4 Italian sausages
  • 1 onion, chopped (large)
  • 16 brussel sprouts
  • 1 clove garlic, crushed
  • 2 tablespoons butter
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon dried oregano
  • 2 teaspoons paprika
  • 1 cup grated Monterey Jack or Cheddar cheese
  • salt and pepper to taste
Directions
Place butter in 9 X 13 baking dish and melt in 350° oven. Cut potatoes and sausage into bite size pieces. Toss potatoes, sausages, onion, brussel sprouts, garlic clove, oregano, paprika and salt and pepper in melted butter and vegetable oil. Bake covered at 350° for 15 to 20 minutes, stirring 2 to 3 times while it's baking. Uncover and bake for an additional 15 to 20 minutes. Remove from oven and toss with cheese. Return to oven for 5 minutes or until cheese is melted and browned on top. Serve immediately.
