Pork Chow Mein Recipe

Quick and easy meal to pull together in a pinch. I usually cook my rice in chicken broth for some added flavor.

Ingredients
  • 1 pound pork sausage
  • 2 cloves garlic, divided
  • 4 tablespoons soy sauce, divided
  • 1 cup chicken broth
  • 2 tablespoons corn starch
  • 1 cup carrots, diced
  • 1 cup celery, sliced
  • 1 cup green onions, sliced
  • 1 cup spinach, diced
  • 4 cups cooked rice
  • chinese noodles
Directions
Cook rice according to package. In a large skillet, brown pork with garlic and 2 tablespoons soy sauce. Remove from skillet; keep warm. Meanwhile, in a small bowl, combine remaining soy sauce, broth and corn starch. Stir until smooth. In skillet, stir fry carrots and celery for 4-5 minutes, until softened. Add onions, spinach and pork and cook 1-2 minutes more. Stir in sauce mixture and boil 3-4 minutes, until thickened. Serve over rice and chinese noodles, if desired.
