Carrot Casserole Recipe

Cheesy cooked carrots with a crunchy topping. If you have picky eaters, this may be the dish that will get them to eat their cooked carrots.

Ingredients
  • 4 cups carrots, sliced
  • onion salt
  • 1 cup Velvetta cheese, cubed
  • 1/4 cup butter or margarine
  • Crushed corn flakes, potato chips, or French fried onions

  • Placed sliced carrots in a pan of water, boil for 5 minutes with onion salt to taste. Drain carrots and leave them slightly moist.
  • In a buttered casserole dish, add the carrots and then dot with cheese cubes, and margarine, distributing each evenly over the carrots.
  • Sprinkle crushed corn flakes, crushed potato chips, or French fried onions on top.
  • Bake in 350 degrees F. oven for 30 minutes.
Note: This recipe also works as a stove top recipe, although the toppings should be omitted.

"I can never get my kids to eat cooked carrots. I tried this casserole because it had cheese in it so I thought maybe they would eat it. They all liked it except my youngest. The others even asked for more. I guess I will be making it again."
