Red Velvet Cake 68 Recipe

Ingredients
  • 1 1/2 cups sugar
  • 1/2 cup butter or shortening
  • 2 Eggs
  • 2 ounces red food coloring
  • 2 tablespoons cocoa
  • 2 1/2 cups cake flour
  • 1 teaspoon Salt
  • 1 1/2 cups buttermilk
  • 1 teaspoon vanilla
  • 1 1/2 teaspoons baking soda
  • 2 tablespoons vinegar
  • ICING
  • 6 tablespoons flour
  • 1 1/4 cups Milk
  • 1 1/4 cups sugar
  • 1 1/2 teaspoons Vanilla
  • 1 1/4 cups butter
Directions
Cream together sugar, shortening, and eggs. Make a paste of the food coloring and cocoa. Add to the first mixture. Sift the cake flour and salt. Mix the buttermilk and vanilla. Add the flour mixture and the buttermilk mixture, alternating to the first mixture. Remove from mixer. Mix the baking soda and vinegar and fold into the batter. Bake in two 8 inch pans at 350° for 30 minutes. Frost with the icing.

Icing: Cook the flour and milk together stirring constantly, until thick . Then cool. Mix and add remaining ingredients, sugar, vanilla, and butter, to the first mixture. Beat 4 minutes. Sometimes I add a little confectioners sugar, but you want a nice creamy, soft icing. Refrigerate or keep cool until serving.
