Mandarin Orange Pineapple Cake Recipe

Ingredients
  • 1 box butter cake mix
  • 1/2 cup vegetable oil
  • 4 eggs
  • 1 can mandarin oranges (11 ounce can)
  • FROSTING:
  • 1 package instant vanilla pudding mix (3.75 oz pkg)
  • 1 can crushed pineapple (15 oz can)
  • 8 ounces Cool Whip
  • Coconut
Directions
Combine cake mix, oil, eggs, and mandarin oranges (do not drain). Beat 4 minutes at medium speed. Bake in 3 greased 9 inch layer pans at 375° for 20-25 minutes. Cool.

For Frosting, stir pudding mix into undrained crushed pineapple. Fold in Cool Whip. Frost cake and sprinkle with coconut.

Keep refrigerated until ready to serve.
