California Carrot Cake Recipe

Ingredients
  • 3 cups sugar
  • 2 1/4 cups oil
  • 5 eggs
  • 3 3/4 teaspoons vanilla
  • 3 3/8 cups flour
  • 4 1/2 teaspoons cinnamon
  • 3 teaspoons baking soda
  • 3 cups carrots
  • 1 can pineapple (crushed and drained)
  • 3/4 cup coconut
  • 3/4 cup walnuts
  • Cream cheese frosting
  • 1 bar cream cheese, softened
  • 2 teaspoons Vanilla
  • 1 box confectioners sugar
  • 1 stick butter, softened
Directions
Mix together sugar, oil, eggs and vanilla. Sift together and add flour, cinnamon and baking soda to above. Mix pineapple, coconut and walnuts, and add to flour mixture. Pour into greased and floured pans and bake at 350° for 50 -55 minutes in a 13 X 9 pan. Beat cream cheese and butter add sugar and vanilla. Frost cake.
