Ingredients
  • 1 cup oil
  • 2 cups sugar
  • 2 cups pumpkin (15 oz can)
  • 4 eggs
  • 2 cups flour
  • 2 tablespoons baking powder
  • 1 teaspoon baking soda
  • 1/2 tablespoon salt
  • 2 tablespoons cinnamon
  • FROSTING:
  • 1 package cream cheese (8 oz pkg)
  • 1 tablespoon vanilla
  • 1/2 cup butter
  • 1 3/4 cups powdered sugar
  • 1/2 cup chopped nuts (optionial)

Preheat the oven to 350 degrees F. Grease and flour a 15x10 inch pan.

Mix oil, sugar, pumpkin, eggs, flour, baking powder, soda, salt and cinnamon until well blended. Pour into prepared pan and bake for 20 minutes; cool.

For frosting, mix cream cheese, vanilla, butter and powdered sugar until well blended. Spread on cooled bars and garnish with chopped nuts, if desired.

"These are good even without the frosting! I was a bit scared of the 2 Tablespoons of cinnamon so I cut it in half, but I think it would have been even better had I used what the recipe said. I'm making these again since they were so easy and delicious."
