VEGETABLE & FETA QUICHE Recipe

Ingredients
  • 1 cup red pepper, sliced
  • 2 cups fresh baby spinach, packed
  • 1 can artichoke hearts, chopped
  • 1 package mushrooms, sliced
  • 5 eggs
  • 1/2 cup heavy cream
  • 1 cup Feta cheese, crumbled
  • 3 tablespoons olive oil
  • salt and pepper to taste
  • 1 ready made 9 inch pie shell
Directions
Preheat oven to 425°. Chop and slice all of the vegetables. Heat the olive oil in a pan and sauté the peppers, add mushrooms, add the artichokes and in the end add the spinach and sauté until it's wilted. Place eggs in a bowl and lightly beat them. Add the cream and the feta cheese to the eggs, then stir it all up. Place the sautéed vegetables on the bottom of the pie shell. Add the egg mixture to cover the vegetables. Place the pie in the middle of the oven and bake for 15 minutes. Reduce the temperature to 350° and bake until set, about 15 more minutes. Serve with a green salad.
