Roasted Red Pepper Hummus Recipe

Delicious served with pita chips or fresh vegetables. This healthy dip is great to serve to a crowd as it keeps at room temperature. The roasted red peppers add just the right touch to the hummus.

Ingredients
  • 1 can garbanzo beans (15 oz can), drained
  • 1 jar roasted red peppers (4 oz jar), drained
  • 3 tablespoons lemon juice
  • 1 1/2 tablespoons tahini
  • 1 clove garlic, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • 1 tablespoon fresh parsley, chopped (optional)

In a food processor or powerful blender, combine all the ingredients except for the salt, pepper and parsley. Process until it is smooth. If necessary, thin down with a few drops of olive oil.

Season the hummus with salt and pepper, to your liking.

Sprinkle with chopped parsley right before serving, if desired.

NOTE: The flavors blend if it is made 1-2 hours in advance, cover and refrigerate. It will keep for up to 4-5 days.

"Spicier than the store-bought kind I like so much but very good. I will halve the cayenne next time but definitely will make again. Tahini is hard to find but ask around because that little bit makes a big difference."
