LENTILS WITH GLORIOUS GREENS OVER PASTA Recipe

Ingredients
  • 1 sweet potato, peeled and cut into small pieces (small)
  • 1/2 onion, peeled and chopped (medium)
  • 2 cloves garlic, minced
  • 1 tablespoon Extra virgin olive oil
  • 1 1/3 cups lentil beans
  • 1 bay leaf
  • 1 teaspoon fennel seeds
  • 1 teaspoon fresh rosemary, chopped
  • 3 1/4 cups water
  • 1 can tomato sauce (8 ounce can)
  • 1/2 cup water
  • 1 bunch Swiss chard (large bunch)
  • salt and fresh ground pepper to taste
Directions
Heat olive oil in large skillet over medium low heat. Add sweet potatoes, onion and garlic. Sauté for 5 minutes. Stir in lentils, bay leaf, fennel seed and rosemary. Add water and bring to a boil. Reduce heat to low, cover pot and simmer for 20 minutes. Prepare the Swiss chard by washing, removing thick stems and chopping leaves into bite sized pieces. Discard stems and set leaves aside. Add tomato sauce and 1/2 to 1 cup water to lentil mixture. Stir. Heat to simmer. Place chard on top of lentils. Cover and cook 7 minutes. Season with salt and pepper. Discard bay leaf. Spoon over favorite pasta.

6 to 8 servings
