  • 3 cups chicken broth
  • 1 head cauliflower florets
  • 2 heads broccoli florets
  • 2 tablespoons butter
  • 1 onion, diced
  • 2 stalks celery, diced
  • 2 tablespoons all purpose flour
  • 1 cup milk, divided
  • 1 cup processed cheese, cubed

In a large pot, cook broth, cauliflower florets and broccoli florets until vegetables are tender.

Meanwhile, in a separate pan, saute butter, onion and celery over medium heat until translucent. Add flour and cook for 1 minute. Pour in milk and stir until thickened; remove from heat.

Add thickened mixture to cauliflower-broccoli mixture. Add cheese and stir until melted.

"I really didn't think this would be as good as it was! It was so easy and tasty. I used water mixed with bouillon and also used frozen broccoli and cooked it with the cauliflower, only I added it when the cauliflower was almost done. The whole family loved this soup."
