Chicken Long Rice Recipe

Ingredients
  • 3 packages rice sticks (also called bihon-translucent pancit noodles, soaked)
  • 2 1/2 pounds chicken wing pieces, thawed
  • 8 cans low sodium chicken broth
  • 1 package green onions, chopped
  • 1 1/2 cups soy sauce
Directions
One hour prior to preparing the meat, in a very large bowl, soak the rice noodles in hot water for 1 hour or longer until the rice noodles are very soft.

Drain the noodles, then add warm water. Drain the noodles again. When you take them out of the water, the noodles should slip out of your fingers.

Next, boil the chicken wings in chicken broth until the wing meat easily falls off the bone. The meat should be all white-no pink. Usually it will take about 1 hour for this amount of meat on medium high heat.

Once the chicken wings are done, put the drained noodles in the chicken pot, add the chopped green onions and soy sauce. Simmer for 10 minutes and serve it up in a big bowl.

**NOTE: If you want your soup darker and a little stronger tasting, add 1/2 cup more of soy sauce.
