Ingredients
2/3 cup salt
3 quarts ice cold water
8 cups thinly sliced squash
3 cups sugar
2 cups vinegar
2 teaspoons mustard seed
1 jar chopped pimento (large jar)
2 cups sliced onion
2 cups chopped bell pepper
Directions
Mix salt in ice water. Add squash and soak for 1 hour. Bring to a boil, sugar, vinegar and mustard seed. Drain squash and add with pimentos, onions, and bell pepper to sugar mix. Bring back to a boil. Put in jars and seal.
