Ingredients
  • 1 package saltine crackers, crushed
  • 1 cup all- purpose flour
  • 1 1/4 tablespoons seasoned salt
  • 2/3 cup buttermilk
  • 2 eggs (Large)
  • 1 1/4 pounds cubed steak
  • vegetable oil
  • GRAVY:
  • 4 tablespoons all-purpose flour
  • 3 cups milk
  • 1 teaspoon black pepper
  • 2 teaspoons salt
Directions
Preheat oven to 225 degrees F.

In a shallow pan, mix crackers, flour and seasoned salt.

In wide bowl, whisk buttermilk and eggs.

Dredge steaks in cracker mixture; dip in buttermilk, then dredge again in cracker mixture. Place on wire rack to set crust for 5 minutes.

Pour oil 1/2 inch deep in large heavy skillet and heat to 360 degrees F. Fry steaks 3-4 minutes per side or until golden brown turning ONLY once.

Remove steaks to shallow pan and place in oven to keep warm. Carefully drain oil leaving 1-2 tablespoons of browned bits from steak in skillet to be used for the gravy to go over steak.

For the milk gravy, place skillet with leftover oil and browned bits from steak over medium heat. Whisk in flour constantly for 1 minute. Slowly add milk, whisking constantly. Stir in salt and pepper. Continue cooking, whisking constantly 8-10 minutes or until thickened.

Serve over steak and mashed potatoes, if desired.
