Chicken Milanese a la Napolitana Recipe

  • 4 chicken breasts, 1/4 inch thick butterflied
  • kosher salt to taste
  • 1 cup flour
  • 2 Eggs, beaten
  • 1 tablespoon water
  • 1 1/2 cups Panko bread crumbs
  • 1/2 cup Parmesan Cheese, grated
  • 2 tablespoons extra-virgin olive oil
  • 1 cup marinara sauce
  • 4 ham slices (large)
  • 1/4 cup aged Swiss cheese
Preheat oven to 350°

Season chicken breasts with kosher salt. Add flour to a shallow dish. Combine eggs and water in a second dish. Combine bread crumbs and cheese and add to another shallow dish. Coat chicken with flour, then drip in egg mixture. Finally coat chicken in the bread crumb mixture. Set breaded chicken on a sheet tray and refrigerate for a hour. Heat oil in a large sauce pan to medium high. Add breaded chicken to pan and fry until brown, about 2 to 3 minutes per side. Place fired chicken in a baking dish. Top with marinara sauce and place one ham slice on each chicken breast. Sprinkle with Swiss cheese and bake for 10 minutes or until cheese melts.
