Spotted Dog Bread  
Originating in Ireland, the Spotted Dog is a fruit bread made using the same key ingredients as the traditional Irish Soda Bread with the addition of sugar and dried fruit. Typically, raisins or currants are added, which make the bread look "spotted" and thus the name. Since this is basically the same ingredients as the tradtional Irish bread, Spotted Dog Bread is best if consumed the day it is baked, since the flavor and texture change, becoming less flavorful and drier in consistency as the days go by.
