A short-grain rice variety that is one of the best for the production of sake, which is a popular Japanese rice wine. The grains are a bit larger than other short-grain varieties and the rice does not contain as much protein or fat, which is beneficial in producing sake. Nishiki rice is available in Asian markets, specialty shops, and through mail order suppliers.
