Coombe Castle Cheddar Cheese  
A variety of cheddar cheese made from cow's milk and produced in the Coombe Castle region of England, an area close to the origin of cheddar cheese. This cheese is made as a white or a golden orange smooth textured cheddar with flavors ranging from very mild as a fresh cheese to a nutty or sharp and tangy aged cheddar. It is marketed as a mild cheddar when aged for 3 months, a medium cheddar aged 6 months, a mature cheddar aged almost a year, and a very mature cheese when aged over a year.
