A food made popular in the southern U.S. that is made from the small intestines of hogs. The intestines are slow cooked over several hours in an attempt to tenderize the meat and reduce the chewy texture of this organ. Chitterlings, also known as chitts or chitlins, are used as ingredients for sausage (Andouille), side dishes, main dishes, soups, and stews. They can be broiled, fried, barbecued, or cooked in a slow cooker. Chitterlings are a part of a traditional southern U.S. meal that may also include ham, collard greens, and sweet potato pie.
