A type of French fritter that is very light and sweet. The batter is prepared with beaten egg whites and it may be flavored with ground almonds, nutmeg, and other seasonings. It is then fried in oil and may be sprinkled with sugar. Single squares of sweet dough, doughnut shapes, or fruit encased and fried in the batter are all examples of beignets that are created. A calas is another similar fritter, however, rice is the main filling.
