Potato Pancake

A round flat cake, which is well known as a breakfast food, but is also enjoyed by many for lunch and supper. The batter is poured slowly on a hot griddle or skillet to form round cakes and cooked at a high heat. There are many variations in the type of pancakes served, from variations in ingredients to the thickness, size, and toppings used. They are used as entrees, appetizers and desserts. Also known as hotcakes, griddlecakes and flapjacks.
