Dry corn dough used to make corn tortillas. In Spanish, masa means ''dough'', which in Mexico can be translated to mean ''corn dough'', an essential ingredient in Mexican cooking. The corn dough is made by boiling corn in powdered lime, washing it, letting it dry, and then grinding the remaining mixture. Water is added to this ground meal to form dough that is used to make tortillas and tamales. Masa harina is a powdered form of dough, which is a manufactured dough most often used in recipes requiring masa.
