A very popular Swedish cheese made from cow's milk. It has a pale yellow color with a soft supple texture containing many small holes throughout. It provides a nutty and somewhat tangy flavor, very similar to cheddar, that intensifies with age. This cheese is typically aged for 6 months or more if it is made with whole milk or approximately 4 months if made with skimmed milk. It is a good snacking, sandwich, melting or salad cheese. Herrgardsost may also be referred to as Herrgard cheese.
