A low-fat fish that is a member of the drum family, found along the southeastern coast of the United States and in the Gulf of Mexico. Smaller red drum, weighing less than ten pounds, have a sweet, mild flavor and a moist flaky texture. Larger fish have a tendency to have a coarser flesh. This fish is also known as redfish, channel bass, spottail bass, red bass and puppy drum. If red drum is not available, other members of the drum family can most often be used, such as black drum, or weakfish. To check the fish for doneness, use the tip of a sharp knife and cut through the thickest part of the fillet. If the fish has been properly cooked, the meat will appear opaque but will still be moist.
