A small pork sausage native to Mexico, that is highly seasoned with various spices, such as chives, cloves, coriander, mace, onion, thyme, and chili peppers. Typically made into lengths that are 1 to 3 inches long, the traditional Chipolata Sausages contain coarsely ground pork however, variations of this sausage may also be made with a combination of beef and pork. The smaller sausages are most often served as cocktail wienerS for appetizers while the larger sausages are typically served as a breakfast sausage. A variety of food dishes also use the Chipolata Sausage as a key ingredient that is mixed with rice, beans and vegetables to create various casserole-like foods.
