Whole kernels of barley grain that have had the bran removed and been polished four to six times, which creates a smooth surface and a pearl like finish. The polishing makes it easier to cook and digest. It is available in coarse, medium and fine sizes and in regular and quick cooking forms. Pearl barley is used in soups, stews and casseroles.
