Lingonberry Sauce
 
A small, ruby colored Swedish berry that grows on a creeping evergreen plant that is common in woodland forests. This berry has a slightly bitter to sweet taste which is somewhat similar to a cranberry in flavor but sweeter. Soft in texture, the Lingonberry is used as an ingredient in baked goods such as the Swedish "fyllda strutar" (Pastry cones with a Lingonberry filling and whipped cream topping), in sauces and served as a flavoring for yogurt. Fresh Lingonberries are plentiful in Scandinavian forests, where they are often referred to as cowberries, but are hard to find in other areas. Lingonberry preserves or sauces can be found in many food stores.
