Directions
Put chicken breasts in large plastic freezer bag. Add soy sauce, peanut oil, lime juice, ginger, and garlic. Seal bag and shake it well to combine ingredients. Marinate for at least 1 hour, preferably overnight. Place bag in freezer where it will keep for up to 6 months. Before cooking chicken, remove bag from freezer and thaw it overnight in refrigerator. Heat a well-seasoned cast iron pan, a non stick skillet, or a grill pan over medium high heat. Remove chicken from marinade and shake off any excess; season with salt and pepper. Cook chicken breasts until done, about 4-5 minutes per side.

This sounded good and can be make ahead, frozen, then used at a camp site.

-1/2 cup soy sauce
-1/4 cup Peanut oil
-1 lime, juiced
-1 piece ginger, peeled and chopped (1 inch piece)
-2 cloves garlic, chopped
- kosher salt
- freshly ground black pepper
