| | Directions | | Preheat oven to 350°. Grate 1 tsp. zest from limes. Peel limes and remove segments; chop. Mix together lime segments, pineapple, onion, honey, oil, cilantro, 1/4 tsp. salt, pepper, and lime zest. Set aside. Coat pan with cooking spray. Sprinkle salmon pieces with Cajun seasoning and 1/2 tsp. salt. Place salmon 3 inches apart on the pan. Bake until they are opaque in the centers (15-17 minutes). Divide salmon among serving plates and top with lime mixture. |
