Preheat oven to 350°. Spray 13" X 9" pan with cooking spray. Place chicken in the pan and sprinkle with salt and pepper. Cover chicken with the jar of salsa. Bake for 40 minutes. Cover with cheese and cook an additional 10 minutes. Serve over rice.
