Creamy Low Fat Broccoli Soup - Recipe

A healthy version of a creamed soup favorite. You'll never know it doesn't have the full fat cream in it. Replace cauliflower for the rice for a low-carb version.

Creamy Low Fat Broccoli Soup Recipe
Cut broccoli flowers from the stems. Peel the outer layer from the stems and slice into small circles.

Add broccoli stems and rice to broth and boil until the rice is almost cooked through, approximately 15 minutes.

Add milk and broccoli flowers. Cook until the broccoli is tender.

Blend the entire mixture in a blender until it is smooth. Season with salt and pepper to taste.

-2 tablespoons uncooked rice
-1 cup skim milk
