Directions
Preheat oven to 450°. Heat oil in a large skillet over medium-high heat. Add onion and cook for 5 minutes or until softened. Add apples, dried fruit, chestnuts, herbs and a little water. Cook 2-3 minutes or until the water evaporates. Season to taste with salt and pepper. Remove from heat and leave to cool.

-1 onion, finely chopped (large)
-4 cooking apples, peeled, cored,and sliced (large)
-3/4 cup stoned prunes, chopped
-1 cup dark or golden raisins
-3/4 cup no-soak dried apricots, chopped
-15 ounces canned cooked peeled chestnuts inch water, drained
-1 teaspoon chopped fresh thyme or 1/2 teaspoon dried thyme
-1 tablespoon chopped fresh parsley
