Lightly coat a 9 inch pie plate with nonstick cooking spray. In a medium saucepan cook onion and garlic in hot oil until onion is tender. Stir spinach, cottage cheese, feta cheese, egg product, oregano, and black pepper into onion mixture. Spoon the mixture into the prepared pie plate. In a small bowl combine Parmesan cheese and bread crumbs; sprinkle over spinach mixture. Bake uncovered, in a 350° oven for 30 to 35 minutes or until a knife inserted near center comes out clean.
