Heat oven to 400°F. Mix potatoes, mushrooms, 1 T. of olive oil, and 1/2 tsp. of salt and pepper in a baking pan. Bake for 20 minutes. Place the salmon in the baking pan with the vegetables. Sprinkle salmon with 1/4 tsp. salt and pepper. Bake uncovered for approximately 12 to 15 minutes. Mix the vinegar, mustard, parsley, 2 T. of olive oil, and 1/4 tsp. salt and pepper. Drizzle over the salmon and vegetables before serving. |
