Brown chicken in olive oil then remove from pan. Brown onion and garlic, add salt. Add tomatoes, chicken broth, and mushrooms. Add chicken. Cover pan and simmer 40 min. or until chicken is tender. Remove chicken. Gradually add the cornstarch, blending gently; then add the cream. Place chicken into sauce and simmer 5-10 min. Serve over prepared brown rice or whole wheat pasta.
