Mini Taco Cups - Recipe

A fun way to enjoy the flavor of tacos. Taco meat, tortilla chips, sour cream, black olives, cheese, and salsa, all in one little cup.

Mini Taco Cups Recipe
Directions
MEAT CUPS:
  • Combine meat, seasoning, and water. Mix well.
  • Press meat mixture into bottom and sides of mini muffin pans. Set aside.
FILLING:
  • Combine sour cream, salsa, olives, 1/4 cup of cheese, and 3/4 C. tortilla chips.
  • Spoon filling into each shell, mounding slightly.
  • Combine remaining chips and cheese. Sprinkle over top.
  • Place muffin tin on a cookie sheet in case grease drips over the edge of the pan when baking. Bake at 375 degrees F. for 15 minutes. Garnish with salsa.

-2 tablespoons taco seasoning mix
-2 tablespoons cold water
- FILLLING:
-1 cup sour cream
-2 tablespoons salsa
-2 ounces minced ripe olives, sliced
-1/4 cup shredded cheddar cheese
-1 1/2 cups crushed tortilla chips, divided
-1/2 cup shredded cheddar cheese
-1/4 cup salsa for garnish
